Southern Hemisphere Oils Are Almost Here

Music on MainWe all know time flies when you're having fun and we can say the same for when you're doing what you love. Olive oil production seasons for each hemisphere are six months apart, and it's hard to believe the time has almost come for our Northern Hemisphere oils to begin leaving our shelves. Inventory is limited so check you pantry and check if you have enough until next release.

By providing oils from both hemispheres, D'Avolio ensures the latest and freshest products will be available for you to enjoy. Southern Hemisphere oils are crushed April through June and will start to appear in our stores sometime in August. So if you've missed your favorites from Australia and Chile, then prepare those taste buds for a happy reunion.

 

Diabetes: How Olive Oil Can Help

History of Olive OilUnfortunately a very prevalent disease, diabetes affects over 25 million children and adults in the United States. According to the 2011 National Diabetes Fact sheet, 215,000 of those people are under 20 years of age. These are scary statistics, especially considering that diabetes contributed to over 231,000 deaths in 2007, according to the American Diabetes Association. Being conscientious of food and fitness choices can dramatically help both in prevention of and as part of a treatment plan for diabetes. The ADA recommends a diet rich in dark leafy greens, berries and citrus fruits, tomatoes, fish, sweet potatoes, whole grains, nuts, and low fat dairy foods. Certain fats, such as polyunsaturated, monounsaturated, and omega-3's are also given the green light, with olive oil being the first on the list. With such a variety to choose from, D'Avolio olive oils can keep you satisfied while on a healthy diet to help manage your diabetes.

Local chef's like Andrew Sempert have partnered with D'Avolio Kitchen to bring his commitment to a better lifestyle through healthier food options. To read about Andrew is an inspiring story that we can all be proud of.

Chicken breast dinner with mashed sweet potatoes and tomato salad. That was the dish Sempert cooked at D'Avolio's Kitchen, using oregano vinegar, oil, fresh tomatoes and peppers. He emphasizes the use of fresh ingredients and spices for flavorful, healthy meals.

The Edible Buffalo Blog, recently visited the D'Avolio Kitchen. They chatted with owner Dan Gagliardo who shared with us some of the secrets behind the new kitchen. He disclosed that many of the tried and true recipes being used came from his grandmother. And they have a resident baker who comes into the kitchen during the wee hours to bake fresh breads available daily. They were particularly pleased with the margarita pizza which had such unbelievable flavor that they returned the next day for more! And as any chef will tell you, the hallmark of any authentic Italian kitchen is an outstanding margarita pizza! A simple composition with rich, bold flavor

Cooking Basics

Grilling with Olive OilsSummer is a time for some barbecue, so grab your grill gear and turn up the heat. Not everyone is a grill master, however, so here are some basic tips to help you impress your guests at your next outdoor gathering.

Make sure you preheat your grill with all the burners on high for about 10-15 minutes. Just before placing your meat or veggies on the grill, try lightly coating the grates with some olive oil to prevent sticking. Use a heat resistant brush, paper towel, or piece of cloth held in place with long grill tongs to apply the oil.

Be careful to not use too much, you don’t want it to catch fire. Once the grill is preheated, place your food on the cooking grate and then adjust the burners to the temperature suggested in your recipe. Put the lid of the grill down and only lift it to turn food or check for doneness at the end of the cooking time. Direct Method of cooking: This means you’re cooking food directly over the heat source for foods that take less than 25 minutes. You’d use this for foods like steaks, chops, kabobs, and vegetables.

This method is good for searing meats too. Indirect Method of cooking: This is when the heat is on either side of the food, not directly beneath it. Use this method for foods that require 25 minutes or more of grilling time or if direct heat would dry out or scorch the food. Use this method for roasts, ribs, whole chickens, turkeys, and delicate fish fillets.

Remember, NO PEEKING with this method. Heat escapes each time you lift the lid and will increase cooking time. Note: Certain recipes may require you to use both methods. You can sear the meat with direct heat then move it over to finish cooking with indirect heat.
